Cucumber-Dill Kale Salad


2/3 cup olive oil

2 tbsp lemon juice (or juice from one lemon)

2 cloves of garlic, minced

1/4 cup fresh dill, or 1 tbsp dried dill

1/2 tsp salt

1/2 tsp pepper

2 tbsp coconut milk

1 cucumber, seeded and shredded

1 bunch of kale

1 extra cucumber, sliced or diced

1/4 cup sunflower seeds

1/4 cup dried cranberries or raisins


Blend in a food processor or blender the following dressing ingredients: olive oil, lemon juice, garlic, dill, salt, pepper, coconut milk, and the seeded and shredded cucumber. Chop the kale into bite-sized pieces and toss it with the extra cucumber, sunflower seeds, and dried cranberries. Add the blended dressing to the salad ingredients, toss evenly, and enjoy!
