Garlic Galore: Recipes After the Harvest

We just harvested 50 pounds of garlic at Ekar Farm. Now, what do we do with it?

First we dry out, or “cure,” our garlic out in the sun so we can preserve it for months to come. Once this process is done, it’s time to cook up some yummy garlicly dishes! Find some of our staff favorites below:

Garlic Tea – The Perfect Natural Cold Remedy

Ingredients:

Simmer the garlic in the water over the stove for about 10 minutes. Strain the garlic out of the liquid and add the lemon juice and honey to your liking. Drink either hot to soothe a sore throat, or chill for a refreshing beverage on a hot day!

Garlic-Beet Hummus

Ingredients:

Blend beet by itself first in a food processor or blender. Add the remaining ingredients except for olive oil and blend until smooth. Drizzle the olive oil into the mixture as the hummus blends together. Taste and adjust your seasonings to your liking. If it’s too thick, add a bit of water. Enjoy this dip with veggies, crackers, sandwiches, salads and more!
